With easyJet you can book flights out from one UK airport and then organise it so that you return to a different UK airport and the price shown for the flights will be shown in sterling.
Can you do this with Ryanair? when I try it with Ryanair it always states the prices in euros and I'm sure there will be some con involved in the conversion back to sterling for the billing.

You will be making 2 separate bookings. One from the UK for which you will be charged in GBP, the other I presume from somewhere in the Eurozone for which you will be charged in Euros. The conversion rate and fee will be set by your bank.0
