Beef casserole

Options
Just made this in the slow cooker, and have to say its a success, so thought I would share, if thats ok, its a low fat recipe.

Beef Cobbler

400g Lean braising steak
300 ml beef stock
2 onions ( I used shallots today)
200g tinned tomatoes
2 tbs pearl barley
tsp herbs
2 bay leaves
2 large carrots

75g self raising flour
1/4 tsp baking powder
20g marg/butter
2tsp mustard
1 tbsp parsley
Enough water to mix

1/2 tsp milk

Put all top bits in slow cooker.
About 20 mins before ready to eat, mix bottom ingredients together, roll into a sausage shape and cut into scones, brush with milk, turn up the slow cooker and cook for approx 20 mins.

    This sounds delicious. I dont have a slow cooker, but plan on having one by the end of the summer, will look out for one at car boot fairs, and if I cant get one there, will resort to looking out for a cheap one in the shops, either way, I've got plenty of time to get one for the colder weather setting in. OH wants a bread maker as well, so we're also on the lookout for one of these at CB or shops.

    Sue, you can make this no problems in the oven, in fact the recipe says oven.

    I've not used pearl barley
    what effect does it have on casseroles?

    would leaving it out be ok or should I go and buy some?

    does any one have a recipe for fish chowder its made with milk i think
    sorry if i posted in the wrong thread.....i looked at the recipes for fish
    and cant find onegot few packs smoked cod in the freezer.....reduced in asda
    been steaming it having it with mash& parsley sauce.........give that beef casarole a go

    Leaving it out would be ok, but I must say its made the casserole, the thing I find with slow cookers is the casseroles allways need thickening, not with the pearl barley, it comes out lovely and thick without the need for cornflour.

    Also at approx 30p a pack, that will do this dish many times, it really is money saving as it makes the meat go further. :T

    1 onion, finely chopped
    500g potatoes
    4 rashers of streaky bacon
    200g cod or haddock
    2 carrots, sliced
    half tbsp olive oil
    half tsp turmeric
    4 tbsp single cream
    2 and a half pints stock
    1/4 tsp herbs
    (serves 4)

    Dice half the potatoes. Boil remaining potatoes and mash with some of the stock till creamy. Dice bacon and fish.

    Heat oil. Add bacon for 2 mins. Add onion and potato cubes and cook for 5 mins till no oil is left. Add stock, turmeric, and herbs.

    Bring to boil and simmer for 15 mins.

    Mix in mashed potatoes and carrots until soup is thick then add fish. Simmer for 5 mins until potato cubes and fish are tender.

    Add cream and serve.

    How do you make it?!

    I'm new to this cooking lark having just moved in with boyf. :o I've borrowed Mum's slow cooker as it'll be handy as we're both at work all day.

    I've got beef stewing steak and lots of veg, but I don't know how much water or stock to put in? Also what happens if it finishes before we get home - does it just go cold or does it keep itself warm?

    So embarrased I can't even find the most basic beef casserole receipe - it can't contain cream or flour please.

    SC, it will stay warm until you turn it off as far as I know, although my slow cooker is an old one, don't know if the new ones have timers :confused:

    You just put in the required amount of stock/water, it will not boil over or cook dry unless you left it on for a ridiculous amount of time. I've had my SC filled to the brim and left it on for 12 hours and it cooks perfectly, has the same amount of liquid in that I put in it and cooked beautifully :)

    Someone will come along with a recipe soon, there is a thread specifically for slow cooker recipes somewhere on here.

    Hi Skint_Catt,

    Put the veg into the bottom of the slow cooker. Brown the meat and add it, then fry onions and add them. (some people say that brownig the meat isn't necessary, but I always do because I think it helps the flavour. Add salt, pepper and any herbs, mustard etc, then cover it with some stock and/or a slug of wine or beer. Can you use cornflour? If you can it's worth adding a teaspoon mixed with a little cold water to help thicken the sauce.

    As jo has said, I've never had a meal dry out in the sc. If yours is on a timer it may switch off and need reheating, otherwise it should just be simmering away when you get home.
