Hi again everyone,
I have my boyfriend's parents coming over for dinner tomorrow..it's the first time I have met them since moving into his flat:eek:
I am cooking beef casserole after picking up a lovely, white casserole pot from Asda for £2.50:D
I have bought the diced beef today and am a little unsure what to do next, so if you lovely people don't mind, could you give me some advice..
I have a coleman's sachet that i will probably also use...so my first question is do you brown the beef in the frying pan before you put in the casserole dish or do you put it in uncooked...
My plan is to put beef (uncooked or cooked???) in the white casserole dish.
Then add chopped carrots, onions, mushrooms and leeks into dish (should these also be browned in the pan or put raw into casserole dish)
then I want to add my pots - plan to dice them and pop into dish - again do I pop them in raw or brown them off first
Add water to the sachet and bung in oven for two hours....

I always brown the meat before making a casserole and usually the onions, mushrooms and other veg too but just pop the potatoes in as they are.

Hey, don't have any advice to offer you regarding the casserole, but just wanted to wish you the very best for your evening tomorrow. Just do the best you can meal wise and don't stress about it. Relax as much as you possibly can and be yourself, so that your bf's parents can see the lovely girl that their son fell in love with!

I'd recommend following the advice in MrBadExample's thread on stew. Its a great step by step guide in very simple terms.
Its not necessary to brown things, but most of us tend to. I'd put some plain flour on a plate, add a little salt and pepper (seasoned flour!) then toss each piece lightly in the flour and shake off the excess. Brown on all sides in your oil of choice.
I would normally do this in my Le Creuset dish as it can take direct heat on the hob. If you're at all unsure of whether you can safely put your dish on the hob, use a frying pan.
I would then remove the meat to a plate, add a little more oil, soften the onions and other veg a little (5 mins, max) then add the meat back in, cover with good beef stock, and season with thyme, salt and pepper.
I would thicken the stew at the end using cornflour and bisto powder mixed (slaked) with a little cool water to make a paste. Take a ladle of the sauce from the casserole, add it to the cup with the flour mix, stir vigourously to avoid lumps, and then add this to the casserole pot. This will need to cook out for a few minutes.
If you're cooking this in the oven, remember long and slow. I would say 150 max dependant on your oven.

I have cleaned the flat from top to toe and have even set the table now with all our best linen - it will all be white with very simple candles and our best glasses and crockery (which is also white!!)
Please god, don't let the Dad spill any red wine on my tablecloth:eek:
I've decided not to do a starter, just serve a selection of warm rolls with the casserole and then finish with coffee and cake (again my first ever home made cakes) when we relax on the sofas after dinner. There will be no TV, just jazz and candles on in the background - am smiling as I read this as they will probably think I am trying to seduce them!!!
I'm getting my hair and nails done tomorrow and will go for a simple black shift dress, nothing too tarty - I'm hoping for a simple, elegant, classic look will impress them.
Anyway, need to stop rambling now and go to bed - good night all

all sounds really, really lovely! Again, I must stress, there is no need to impress them and don't go OTT trying to be anything other than yourself. I know it's not exactly Money Saving, but get some booze flowing asap (although not too much for yourself)! You have a great night planned though in that there will be nothing for you to worry about cooking wise. It's all taken care of in advance.....
