how to roast a whole chicken?

    Always shove a few slices of streaky bacon over ours. We had Chicken yesterday too. £3.25 form Lidl stuffed with 15p stuffing from Sainsbury's. Risotto today with the remainder. :D If I use stuffing I leave the elastic on. It is perfectly suitable for roasting as this is what it is for.

    Don't you find the elastic string cooks into the meat though?

    boil it in a pressure cooker then roast it.
    use the stock for soup.

    Nope... I think its designed to keep on so the chicken keeps its shape

    er - I always use the elastic string to hold the legs in place against the body of the chicken. That way you dont get 'dry' chicken legs.

    Yes i do, the one that you posted the linky too is identical to mine.:D

    Its fab, i throw in a chicken and put onions around it, no basting needed as it sorts that out itself. Part way through cooking i`ll add oiled potatoes and chopped carrots.

    The only thing that i have to cook seperately are the greens.

    So easy to clean too, i just soak mine in hot soapy water and it cleans very easily. I`d hate to give mine up.

    Hi

    I bought some of those chickens that were on an offer at three for ten pounds a while back and having used two of them I am looking for advice on the remaining one which I have defrosting at the moment.

    What I am looking for is something other than roasting and using it cold for sandwiches, there are only the two of us and we both like to eat healthily and both work full time.

    Ideally i would like to cook three meals with it - breasts one meal, legs the other and carcass for a soup. I could then freeze the meals for another day.

    Problem is that I have trawled through my recipe books and online and havent found much to inspire me -alot of the recipes contain ingredients that i cannot get at my local shops which defeats the object of making the chicken stretch further. ( i live in a small village with a small coop and not alot else)

    I am sure you all must have some favourite quick and easy recipes that dont involve strange and expensive ingredients......

  • I would recommend looking at the first few posts of the Grocery Challenge threads - every month is listed a long list of recipes. I found one for lemon chicken that looks far easier than any I've seen yet, so I'm going to give that one a go soon! :D

  • I'd make a casserole with the breasts, or just one depending how big they are. I brown the breast(s) then fry a chopped onion and add a tin of chopped tomatoes, I usually add some mushrooms as well but you could use whatever veg you have in. Simmer the sauce for 5 mins then put it in a casserole dish in the oven for half an hour on a medium-low heat. I find the sauce bulks it out so the chicken goes further than it would by its self.

    Then you could make a curry or a pie with the other breast if they're big enough.

    If you have some breadcrumbs and spices you could coat the legs with it and fry/bake them.
