The stalks are the best bit...i fight for those...not bothered about the tree bit,
With the stalks....heat a bit of butter, drop in a chopped onion and soften, add the chopped up stalks and sweat off a little....add a sprinkle of flour and cook a minute or so..add hot stock..veg or chicken and bring to the boil, reduce and simmer..season and blitz...mmmm broccoli soup... dont put a lid on your pan whilst cooking..it makes greens discolour quicker....it will still be slightly darker in colour..but yummy all the same-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50
