Can you freeze fresh broccoli? Can you freeze other fresh Veg too or is it better to just buy it frozen?

blanch them first, not for long though. make some stock from the stalks.

  • better to blanch it before freezing, couple of minutes in boiling water then cool rapidly in cold water. the stalks can be added to stocks, soups blanch and freeze these too.

I've seen these microwave frozen vegetable portions in the supermarket and i like the idea for evenings when I'm on my own and kids lunches but was wondering if any one had made their own and had any tips.

For the broccoli stalks you can soup them, braise them, chop them up and eat them boiled - in some parts of the world (asia i think) they chop of the flower and bin that bit and cook the rest. I sometimes chop them julienne and throw them in a stirfry.

I freeze broccoli and I've never blanched it before. Just wash it, cut it up and freeze as it is.

God, freezing vegetables, that takes me back. My mum had a huge chest freezer, and whenever it was the right season for any particular vegetable, she'd buy it in bulk, blanch it and freeze it. Spent many a winters night peeling and chopping carrots that she'd bought by the sack, or peeling sprouts. Still do it myself if stuffs going cheap, but not on the same scale as my freezers only a quarter of the size of that monster, lol

I dont see why you cant cut into florets and just freeze it, thats basically what peas and sweetcorn are bought from the freezer!

    Hi there

I usually drop it into a pan of boiling water briefly just to blanch it..then drain it and leave it to cool and let any water evaporate and then you can freeze in bags..if you have plenty of space, i sit it out in a tray and pop it to freeze and then bag it..just to make sure it doesnt clump together....
