Can i freeze coconut milk?

    Yes it will freeze well. I'll add your thread to the previous one to keep the ideas together. This thread might help too:

  • You can also use it to make a very nice vegan icecream:

    1 frozen ripe banana
    160ml coconut milk
    2 tbsp sugar
    2 heaped tbsp crunchy peanut butter

    1 tsp vanilla essence
    In a food processor place all ingredients and mix.
    Eat or freeze for later.

    Hi all, I could do with some advice, please!

    I am using coconut milk in a recipe tonight but only want to use half a can as a) it's so expensive and b) it's so fattening! Could I decant the other half into a container and freeze it?

    You can :D It may separate on defrosting, so give it a stir and it'll be fine.

    As the title says - I opened a can of coconut milk to make a thai curry and have over half left over. Can I freeze it or do we have to eat thai curry for the next 3 days?!

    I have frozen it in the past with no problem. Don't try and defrost in microwave though, that didn't end well...
  • It freezes fine, but it separates when you defrost it. It might 'whisk' back to a creamy consistency, but I haven't tried. The flavour's the same, though.

    Yes, it's fine for freezing - it does separate when it defrosts, as fridgesoup and j.e.j. said, but a good stir gets in back to normal.
