Thank you everyone for all the advice, my son doesn`t live here now, but comes to stay overnight once a week, which is why I didn`t want to waste the coconut milk. He loves cheese too, which is a bit of a prob, but less so than finding a milk replacement, so thanks for the advice on the alternatives available.
I think it was the oestrogen in the soya that made him think it would be bad for men, I will show him the post about the benefits.
Thank you.The more I see of men, the more I love dogs - Madame de Sevigne0 -
I just remembered that you can buy DRIED coconut milk. This would mean that you could just make up the amount you need each time.0

Actually, I always used to keep a block of that in because my children like curries. I never thought of using that. I really do get more stupid by the day!The more I see of men, the more I love dogs - Madame de Sevigne0 -

There's an old thread HERE.
People suggest that it should freeze ok. I'd think so too, I never have but would give it a try.

Um... that's creamed coconut you're talking about, not dried
as others have said, coconut milk is really not one of the best substitutes for dairy, try some of the other milk substitutes instead" Baggy, and a bit loose at the seams.. "~ November 8th 2008. Now totally DEBT FREE !~0 -
Thanks to everyone who replied. We are sorted now, and we have become Vegan rather than just vegetarian. With the help of the marvellous O/S Vegan thread on here we have found so many really good alternatives to dairy, and are actually eating a far more varied and exciting diet altogether.
There are some really super recipes about for Vegans. The more I see of men, the more I love dogs - Madame de Sevigne0 -
Title says it all really. I only needed half a can for my curry (with is smelling totally lush!)0
