Gosh this takes me back to when I was about three years old! My dear Dad would carefully cut the cooked rind (and fat!) from his bacon and let me eat it as a treat! I blame him for the fact that I find it almost impossile to remove fat from meat - I still love it!
I'd agree with all the above suggestions - it would definitely flavour soup or stock, and the birds love it too.Resolution:

My Mum always used to drape the Sunday morning bacon rind over the roast chicken, it would crisp up lovely, and flavour the chicken,it was then a race to get to it first!!!0
