I have hunted everywhere for the custard powder cake recipe so if anyone has one can they post it please? I seem to remember that Nigella made cupcakes with custard powder but have searched and can't find anything.Jane

Found this on Delia online - its an old recipe that I had forgotten about. Should taste wonderful made with custard powder - mmmmmm num num num
BLOW AWAY SPONGE
3/4 cup Cornflour
1 heaped teaspoon plain flour
1 level teaspoon cream of tartar
1/2 level teaspoon bicarbonate of soda
4 eggs - separated
pinch of salt
3/4 cup sugar
Pre-heat oven to 180C
Grease 2 x 30cm tins
Sift together 3 times - flours, cream of tartar and bicarbonate of soda
In a bowl beat egg whites til still, add sugar gradually while still beating. When mixture is stiff and glossy add the egg yolks one at a time. Continue to beat til the mixture holds the figure 8 when dropped from the beaters.
Using a metal spoon fold in the flours. Divide evenly between the 2 tins. Bake for 16 mins or until cooked.
Turn out at once onto a wire wrack. When cold fill as desired.
Before you turn out, place a sheet of greaseproof paper onto the rack this will help prevent it from sticking to the rack.Mags - who loves shopping0 -

I've just had a look at my tub of Birds custard powder and it is indeed just cornflour, salt, colour & flavouring (presumably vanilla), there's no sugar though. I wonder if you could make pancakes with it substituting some of the flour? If it worked I'm sure they would be lovely with ice-cream. :drool:Dum Spiro Spero0

I always assumed custard powder contained powdered eggs as well as cornflour, but it would appear I was way out lol.
So basically if you mixed cornflour, a pinch of salt some sugar a bit of vanilla essence and hot milk you would get a white custard?

Try these lovely cupcakes - they were in one of my Good Food magazines and I keep meaning to try them myself:
Custard Buns
100g custard powder
200g softened butter
2 eggs
4 tbsp milk
140g caster sugar
100g self raising flour, sifted
Icing
150g icing sugar
hundreds and thousands to decorate
Heat oven to 180C/ fan 160C/ Gas 4
Place 12 paper cases into a muffin tray
Beat the custard powder with the butter, eggs and milk, then stir in the sugar and fold in the sifted flour. Spoon into the paper cases.
Bake for 20 mins until a skewer inserted into the centre comes out clean. Leave to cool completely.
Mix the icing sugar with about 3 tbsp water to form a thick paste. Cover the tops of the buns with the icing, then decorate with hundreds and thousands.0 -
