    I love bolognese too, I've just taken a batch out of the freezer that I made a couple of weeks ago.
    I made a huge pan of chilli and a huge pan of bolognese.

    It's easy to give in to that negative voice that chants "cant do it" BUT we lift each other up.
    We dont count all the runners ahead of us & feel intimidated.

    i've tried... several times... but always ends up looking a bit pale and uninteresting... needs a tube of tomato puree to make it a nice rich colour.... so of course then all it tastes of is tomato puree!

    safer with a jar....

    although if i was making me or erin veggie pasta sauce i'd just bung in some tomatoes, herbs, garlic, parmesan, onions and it's lush... but somehow never translates well when added to mince....

    not that i've had pasta for months and months!!
    I'm just a seething mass of contradictions....
    (it's part of my charm!)

    A good slosh of red wine adds to it!
    Either in the saucepan or in the cook or preferably both.

    My secret ingredients for bolognese are:
    tomato ketchup, 2 or 3 grated carrots -(they can't really be tasted as carrots but they add something to the flavour, bulk up the quantity and sneaks veggies into the diet without thinking about it! :T ) a small splat of HP sauce and a can of corned beef!

    The main recipe is chunky onions, minced steak, a jar of Lloyd Grossman bolognese sauce and a large can of tomatoes, lots of black pepper, shrooms added nearer the end of cooking time.

    I make the sauce by using small tomatoes - I use a whole box and reduce them to give the sauce a nice rich colour then add the puree - but you can use passata instead then it doesnt taste like puree and adds loads of thickness :D

    all the little things like HP sauce and carrots i can see the logic, almost, but who thought to add a can of corned beef to a bolognaise that already has steak mince in it???

  • Sorry about the short message last night, I got no work done at all and didn't want to own up to it. :o

    I'm feeling really down at the moment, I really miss home. :( I love my course but I really wish it was a little closer to my family (and that petrol hadn't gone up so much :mad: ).

    I can't stop in bed feeling sorry for myself all day though. I'll get breakie/lunch in a sec and then maybe put some washing on. It's a decent day so I could even put it on the line. :)
