2 Carrots, chopped quite small
1 onion, chopped quite small
1 Courgette, grated or chopped small
frozen peas, handful
If I have a pepper I'll add it but just as nice without
100g of red lentils
1/2 can of coconut milk ( I freeze the rest for next time)
200ml of water
2 Tblsp of Korma paste or curry powder
Saute the onion in oil until soft. Then put everything in a pot, bring to the boil and then cover and simmer for about 20 mins, you might need to add more water so keep checking it. Serve with rice.0 -
Used up the veg in the box - 1 sweet potato, 3 parsnips and 2 carrots, peeled chopped and micro-waved until soft. Will mash 'em up and fry/heat through with 2 tins black beans in a couple of tablespoons butter & couple of sticks diced celery (don't use onions in this house). Plopped into tortillas with cheese and torn salad leaves and folded up to make burritos.
Dessert - daughter has pushed for pear crumble rather than baked pears so we're going for that. The last apple in the fruit bowl will probably get added as well.0 -

We were going to have Black Saturn's leek and bacon bake to which I was going to add some sweetcorn (in with the leek layer),but I took friend's son home from school whilst she had an appointment and when she came to collect him she ended up staying for rather a long time.Very nice to chat,but no time for leek and bacon bake,so kids had beans on toast - my standard emergency meal. Boys are off to judo in a mo,so Oh and I will have baked spud filled with mashed tinned mackerel,soft cheese,mustard and onion (much nicer than it sounds) and salad.Leftover fresh pineapple for pud.

Hi guys,
We have just finished HM lamb and chickpea stew which was batched cooked and frozen a couple of weeks ago. Yummmmm! No pudding, we generally don't eat puddings much as I like them....How am I overweight???

We've just had shepherds/cottage pie made from freezer left overs. Very nice it was too0

4 Chicken breast or portions
Onion
Mushrooms
Swede
Carrots
Peas
Stock
Lightly fry the onion and mushrooms in butter. Add the chicken for 2-3minutes. Add this along with any hard veg (swede, spuds, carrots etc) to the SC and add the stock. Dash of worcester sauce, pepper and any herbs. Leave for 3hrs, then add frozen peas and cornflour to thicken if needed. Cook for a further 1-2hrs and is ready to serve. I serve with either mash or rice. Sometimes add spuds to the SC if I have some that need using. Ive also added peppers and anything that needs using really. Makes about 5 portions.
