I've got a punnet of chestnut mushrooms and button mushrooms to use up... along with the other punnets of chestnut and button mushrooms I bought last week... so thats 4 punnets in total... oops!

Oh Ive got a cracking one, courtesy of weightwatchers , but slightly adapted
Ok youll need
2 tablespoons low fat spread ( or butter oif course
1 chopped small onion
1 cruyshed clove garlic
1 tabalesppon of dried mixed or fresh herbs
1lb mushrooms
1.5 pints veg stock
1 tablepoonmustard ( i use wholegrain)
4 tablespoons creme fraiche ( you can leave this out if you dont have it not vital)
2 tablespoons dy sherry ( ditto)
1 tablespoon cornflour
method
melt butter in large pan add onion, garlic, herb and sautee for 5 mins
addd mushrooms stirfry for a few mins then add the stock
simmer for 20 mins
blitz with stick blender or food processor, add mustard & creme fraiche at this stage
return soup to pan, add cornflour n sheery if you have it & gently heat till it thickens

My really simple one :
2oz butter
2 spring onions, or one small onion
8oz mushrooms sliced
10fl oz chicken stock
10fl oz milk
1 tbsp flour
5fl oz single cream
Melt 3/4 of the butter and fry onions and mushrooms for about 3 mins. Pour in stock and milk, bring to boil and simmer for 20 mins. Puree in blender/ Melt remaining butter and stir in flour to form smooth paste. Gradually stir into the pureed soup and bring to boil. Season to taste, and stir in the cream.You're only young once, but you can be immature forever0 -
I think the cream or milk is necessary, for colour if nothing else. Otherwise mushroom soup can be a slate gray colour and not very appetising.A friend is someone who overlooks your broken fence and admires the flowers in your garden.0

I just mixed mine with some carrot and onion veg stock herbs etc not a bad colour and lovely.

Even simpler for me.
Chopped onion - fry with smidge of oil in big pan.
Veg stock - add to onion (i normally use 2 cubes made up)
Loads of chopped mushrooms - add to stock and simmer
Season and whizz.
Really simple and yummy, i love it and low fat which is an added bonus!0 -
OK i don't want to waste these.
I have a full 250g pack of chestnut mushrooms and wondered how to make them into a soup for freezing.
I have green peppers, 1 red pepper, 1 courgette, swede, turnips, lots of onions, flour, stock cubes (veg, chicken and beef), cornflour as well as salt, pepper etc.
What would people recommend ? Is it possible to make them into a tasty soup ??? Seems a shame to loose them but i've never really made soup before.A male chef of 4. My restaurant is always full and i don't need to tout for business.
OK OK I'm a house husband but it did sound better my way :beer:0 -
