Minestrone Soup

I've look and can't find one - does anyone had a recipe?

  • for a big pot I use 2 tins of tomatoes then chopped onions and any sort of veg eg broccoli green beans cauliflower etc then not long before it's ready add some small pasta. I use veg stock cubes but you can use any kind needs quite a lot to give a flavour

    I am sure you can find any number of good ones online. One thing I like to do is to keep the rinds of any fresh parmesan I buy in the freezer until I make a minestrone, and then I pop them in the soup at the beginning. By the time it is done the flavour of the parmesan is infused through the soup. Delicious. You should remove the rind at the end but I think it's ok to eat it. Well, I've eaten them and it didn't hurt me (other than adding a bit more padding on my hips).

  • I make it by sweating onion in a little extra virgin olive oil, adding half a finely shredded savoy cabbage, couple of sticks of celery and a couple of carrots, which I blitz together in the food processor before adding, two tins of tomatoes, any fresh tomatoes I may have in the fridge which are past their best, bit of dried oregano, a couple of bay leaves, marigold veg stock powder, and pint and a half of water. I cook it for about an hour and then add some macaroni (about half a mug full), a tin of baked beans and tbs of tomato ketchup. I cook it till its nice and thick and then season to taste and sprinke parmesan on just before serving. Its lovely!

    Its "no need to soak",precooked pasta n grains,..instructions say boil/simmer for 10mins adding fresh veg if desired, but what should i add to make the base for a soup?,water?,stock,tinned tomatoes?..Thanks,ive never made minestrone soup before.

    Hi cooking-mama,

    This is my recipe for minestrone soup which you might be able to adapt to use your packet mix.

    -Melt some butter and olive oil in a pan and cook some bacon until it begins to brown (make sure it's not too fatty as the fat doesn't really melt into the soup.
    -Add finely chopped onion, plenty of crushed garlic and diced carrot.
    -Let it cook for a few minutes then add in either tinned tomatoes or passata and reduce the heat.
    -Leave to sweat for about half an hour.
    -Throw in some basil (add plenty and I use dried in winter), black pepper, then add stock (and a chicken stock cube if homemade is not strong enough).
    -Add diced courgette and finely chopped leek.
    -Leave to simmer until all the veg are almost cooked.
    -Throw in a good handful of pasta (I use fusilli, the twisty one) and simmer.
    -When the pasta is cooked, check the seasoning and stir in a dollop of tomato puree.
    -Serve sprinkled with grated cheese (it's meant to be parmesan but I often just use cheddar).

    I haven't added quantities as I tend to cook by eye, so just add what you think you'll need for your family. Unlike some soups, this makes a really hearty, filling meal. My lot love it when they come home on a winter evening and smell it...their first words are always, ''Is it minestrone for tea?'' with a big smile! It keeps in the fridge for a couple of days and freezes well.
