I get similar soup mix from Morrisons and use whatever veges are in freezer; lots of onions and tinned tomatoes but add pearl barley instead of pasta.Liverpool is one of the wonders of Britain,

Sometimes I think you are me, our user names are so similar!
I don't eat red meat, so not much experience with making meaty flavoured soup, but when I make minestrone I usually just saute onions and garlic, then add tinned tomatoes, some tomato puree and whatever veg I am using. I should imagine that you could add beef stock, if you wanted the taste without the actual meat, or maybe just add some leftover bits of meat? The pasta usually goes in towards the end, as otherwise it will cook too much. I hope that helps! I'm not really one for measuring things, I just chuck stuff into the pan!0 -
that sounds good lucy lemon - I would jsut add some cooked bacon to give it the minestrone feel altho the last minestrone I had at an italian was a totally veggie one and was delicious.Blah0

I make a meaty soup with some skirt beef, onions, carrots, parsnip or swede and some small soup pasta.
Cut the beef into small cubes and add the onion sliced up, cook with either home made stock or stock cubes till almost soft then add the veg and cook till they are done. Add the pasta in at the end as doesnt need a lot of cooking. You can add any veg to this soup that needs using up or even some lentils pulses etc. Much like a minestrone soup but with added meat. You could use a ham shank as well in a similar way. Also a good French Onion soup could have a small amount of pasta or rice added to it for a bit more depth and dont forget there is chicken noodle soup.MARCH £62.38/2500 -

Also don't like to nitpick but is it definitely 120mins at the end? Seems a lot...The beautiful thing about learning is nobody can take it away from you.
