Chicken tikka masala recipe PLEASE!

Today I made the chicken korma recipe from the posting by Curry Queen. It was really nice and i would make it again definitely.

Just wondered if there is a chicken tikka masala recipe using the same basic curry sauce?

I am going to get the book, cant remember the name, but i do have it written down, i think it is someting about making curries like an Indian restaurant. So next time i come to UK that will be one thing that i bring back with me.

But is there a chicken tikka masala recipe anywhere. I hope so, i think i have the curry bug this week.

    Hi Mrsmoneypenny,

Curry Queen has posted here about how she uses the base curry sauce to make chicken tikka masala. This is the Murgh Makhani recipe that she refers to in that post.

Thank you both, well it looks like curry again tomorrow night! In fact, if i cut down on the oil and salt, it will be a very healthy week of curry in front of me! I can just about manage that.

MMMMMmmmmmmm! Love curry but NEVER EVER been able to make it as tasty as the recipe i tried today.

    Thank you Curry Queen

    Hi,

I am looking for a tried and tested Chicken Tikka Masala recipe from scratch for my slow cooker.

I have googled it but get loads of differing recipes, I am cooking for friends one of which thinks he is Gordon Ramsey, so I'd like to at least attempt to knock his socks off!

Interested in how you guys make yours!

    Thanks in advance!

I would have to say that CTM is not really a suitable dish for a slow cooker.

The chicken tikka needs to be done in an oven or under the grill to "weld" the yoghurt & spice marinade onto the skewered chicken pieces. ("Tikka" means "pieces", BTW.)

The tikka masala sauce, (yoghurt or cream, tikka spice mix, condensed tomato soup or tomato puree?) just needs to be warmed through and then you put the chicken pieces into it.

Unfortunately, I too am in need of a better tikka masala sauce recipe. I tried one today and it was not what I was aiming for.

Evidently, there is no standard recipe for chicken tikka masala. A survey in 1998 by the Real Curry Restaurant Guide of 48 different recipes found that the only common ingredient was the chicken.

Try marinating your chicken pieces in Pataks' Tikka Masala paste for an hour or so. Fry chopped onions and garlic with a bit of curry paste till almost burnt, stir in spoonful of pickle or chutney. Add chicken pieces and fry off quickly. Slowly add a bit of tomato paste and some coconut milk and chicken stock. Simmer for about 15 minutes, uncovered so it starts to thicken. Stir in toasted flaked almonds and a generous lump of butter plus some shredded spinach or dark green leaves to finish off. Taste it and correct the seasoning (salt, pepper, squeeze of lemon, whatever) till you are happy with it.

I have a new years resolution to learn how to cook currys from scratch. I have now managed to cook two tikka masala currys which were both nice but not what i want....

I love the tikka masala that you get when you visit an indian restaurant (a thing i don't do very often due to lack of money)...the sauce is that lovely creamy red/pink colour). Has anyone got a good recipe for a curry like this, can anyone put me out of my misery?:sad:
