:T Thanks so much for all your replies. Glad there are so many of you out there who love the violet creams! I think that I will try out making the fondant with the violet syrup. I will let you all know how it goes. I've been doing a lot of googling as well and it seems as if there is some kind of secret recipe involving sackloads of fresh violets and sugar, but I'm sure that it must be easier than that!0

I noticed your thread the other day,I found you a recipe for violet creams(never heard of them myself)in my good house keeping,chocolates sweets and toffees book.I've never followed any of the recipes in there but have often drooled at the pictures!
few drops of violet essence
few drops violet colouring
8oz boiled fodant*
cryslallised violets to decorate.
Kneed essence and colouring into fondant,allow to stand 1 hour before using.shape into balls,flatten slightly,place a violet crystal in centre,allow 24 hrs to dry.
*boiled fondant(makes approx 1 1/4 pound)
150 ml / 1/4 pint water
450g / 1lb granulated sugar
3 level tbsp powdered glucose,or a good pinch cream of tartar
Heat water and sugar gently,until sugar disolved,bring to boil,add glucoes/cream of tartar,boil to soft ball stage.sprinkle a little water onto marbe slab or wooden chopping board,pour the syrup onto it and allow to cool a few mins.when it forms a skin around the edges,use a spatula to collect the mixture together,then turn it,working it back and forwards in figure of 8 movement.Continue to work it collecting it into as small a compass as possible,untill the grains change in consistancy ,becoming opaque and firm,scrape off slab,and knead in hands untill even textured throughout.
Sorry if I've left this to late to sort out for mothers day,please let me know if you try it.Sounds like just the thing my mum would like,not sure how available violet essence and crystalised violets are though?mmm thinking about it,I really want to try these!Are they like palma violets?I love those!Happy cooking.0 -

Just seen the recipe. Thanks Peakma, that's brilliant and I shall definitely be trying it soon, although the fondant bit looks a bit scary!!! The lavender cake sounds great too - you have a lovely website competitionscafe!

By Marion Neil (1913)
Creamed Violets
1 lb. (2 cups) sugar
½ pint (1 cup) cream
Few drops violet color
½ teaspoonful vanilla extract
½ teaspoonful rose extract
4 tablespoonfuls (1/4 cup) honey
1 white of egg
Pinch cream of tartar
Dissolve the sugar in the cream; then add the cream of
tartar and the honey and boil, stirring all the time until
the syrup reaches 240°, or until it forms a soft ball when
tried in cold water. Remove from the fire; add the stiffly
beaten white of egg, the violet color, and the extracts.
Beat till creamy. Drop on waxed paper.
With a pointed stick shape into violet petals. Do not
touch till firm.
Sounds an old recipe, so dont know if it is the same:D

If it's any help I saw crystallised violets in Sainsburys yesterday (I didn't know you could still get them! My Mum used to use them, crystallised rose and mimosa balls to decorate cakes n things, but I' harking back to the 70's there :rolleyes: )0

Good grief! - this brought back a few memories. We were taught how to make crystallised violets when I was at school - we actually had to pick the violets from our garden ! Sorry can't help any further - but thanks for the memories!0
