Help about Stocks and Shares ISA's please

I am thinking about investing in stocks and shares ISA's and was looking for some advice. I plan to spread my allowance through different funds and providers for example £500 in HSBC emerging markets and £500 in Lloyds FTSE tracker etc.I read on another thread though that unless you use a fund provider like Hargreaves Lansdown you are stuck with one provider, is that correct???
Also how does one decide which provider and supermarket to use???
