  • hi all

    now that my youngest ds is in school full time i feel like i want to take up baking cakes as a hobby. :D

    basically i am a bit of a novice when it comes to this!! so wondered if anyone has any recipies to get me started that are quite easy and does not take too much effort until i find my feet in the world of home made cakes!!! :eek:
    me and my boys enjoy all types of cakes so will give anything a go.

    Rock buns are easy peasy.

    6 oz sr flouor
    3 oz sugar
    3 oz marg.
    couple of handfuls of mixed dried fruit
    1 egg.

    Rub the marg into the flour, add the sugar, add the mixed fruit.

    add the egg and mix til its quite stiff. but just a little sticky.

    put spoonfuls on a baking tray and roughen them up a bit, then cook at about 190 for about 10/15 minutes, you will see when they are done when they are golden brown. Dont worry if they are soft when you take them out.
    they will 'rock up' Like I say, easy peasy.
    make the most of it, we are only here for the weekend.

    Twinks hobnobs are a favourite with most OS'ers, though not strictly a cake I suppose (recipe in the Grocery Challenge list, 2nd link below)

    if there's a particular kind of cake you have in mind I'm sure someone would come up with a recipe, good luck! ;)

    What about lemon drizzle cake? I have never met anyone who can't make lemon drizzle cake. Some may make it better than others, but I have not (yet!) met anyone who has managed to ruin it.

    If you stick to basics for a while you won't go far wrong :)

    Ordinary sponge ratios,
    6 flour
    3 eggs
    3oz butter
    3 oz sugar,
    Mix it all together and pour into tins and bake for about 20 minutes on 180.


    Crumble mix is easy
    5 oz pl flour
    2 oz butter
    2 oz sugar.
    Just mix with your fingers into breadcrumbs, sprinkle onto fruit (apple or pear or frozen forest fruits etc).
    Bake gas mark 5 for about 40 minutes.

    When making the crumble mix, I mix in a couple of crushed ginger nuts or some porridge oats.

    Crumble a Weetabix into the crumble mixture for a bit of crunch, loverly............

    If you are new to cake making I recommend delia online
    www.deliaonline.com as she gives really precise instructions and lots of encouragement.
    I used ( and still do) her recipes when I was learing to cook/bake.

    I learnt a basic cake rec at school and has served me well for the last ermmmm nearly 20 years (yikes that sounds a long time ago)

    4oz s/r flour
    4oz sugar
    4oz butter
    and 2 eggs
    That makes a nice basic cake (cream sugar and butter, add a bit of flour and 1 egg, mix then add rest of flour and egg)
    sometimes i mix 2 heaped spoons of cocoa powder with a little water (make a paste) and then add that into mix = yummy choc cake or 12 buns or add some chopped apples (1 or 2 in small pieces) into mix to make yummy apple cakes
  • Go to the library/charity shop and find yourself a copy of Mary Berry's Ultimate Cake Book. If you can't find it, get her Baking Bible instead. Mary Berry is the goddess of cakes and you cannot go wrong with her recipes :D

    those should be a good starter - i would start with one recipe, perfect it (mine was carrot cake?! but i would recommend a basic sponge), and take it from there.

    Ask questions, and you will find most cake recipes have their own thread in here!

    I searched but couldn't find anything
    will help you learn how to find threads :D

    I'll merge this later on. Be warned, learning to bake is not good for the waistline! :eek::o
