    As for the pizza with courgettes:

    I cheated and bought the pizza base at tesco or asda (57 p for two) it's a mix you just add water and then knead and leave to rise for 10 minutes.You then cut the courgettes in thin rounds and put on the base.Sprinkle a little oil on them and a little black pepper.You need to cut about half a mozzarella cheese before hand and cut it in small pieces and leave it in a sieve for at least 10 minutes so the water can drain from it (so as to not make the pizza too soggy)
    .Then sprinkle mozzarella cheese on top of courgettes and bake in the oven for 20 mins at gas 7.Yummy

    and for the potato pizza: do the same as above but use potatoes and cut them in thin rounds as well

    These pizzas do not have a tomato base but I assure you they are very popular in Italy .Try them and then let me know.

    Here are my last recipes
    unfortunately I can't find the recipe for the spaghetti omelette but will find it eventually.In the meantime I'll post the others:
    potato gnocchi (dumplings)

    1kg potatoes
    250 gr flour

    wash the potatoes, cut them in small pieces and boil them until they are soft.Then put them though a potato ricer on a floured surface and let them get cold.Once the potatoes are cold add the flour and work the mix until it doesn't stick to the hands anymore.Make some long sausages out of it and cut in small bits then pass these little square on the back of a fork to give them lines all across.
    They are now ready to be cooked
    Boil some water with salt
    put the gnocchi in the water and cook until they come to the surface.then they are ready.
    these should be eaten with tomato sauce and mince meat (bolognese sauce) and they are quite rich.but very very nice
    they are also good if you want to make a cheese sauce to go with it

    and the last one

    potato,mushroom and emmenthal cheese bake


    put 600 gr. sliced and half boiled potatoes in an oven tray and alternate them with sliced mushrooms and pieces of emmenthal and keep doing it until all he tray is covered.
    Sprinkle with a little oil and with breadcrumbs and pour over some broth and put in the oven for 30 mins at 180 degrees
    hmm yummy
    if it is a little soggy turn over and put under the grill until it browns

    can't believe that gnocci is that easy to make - must have a go at the weekend. DO you use normal plain flour or special 00 flour?

    I think you have done really really well on your bidget and it has inspired me to get out my old recipe booklet and do a bit more planning and bulk cooking again.

    scheming_gipsy if you look at the bottom of the cannelloni recipe there is another bit where you can use bolognese sauce

    To make cannelloni with bolognese sauce
    make some white sauce by putting a knob of butter (about 50gr.) in a pan and then adding some flour to make a paste (sift the flour) and then add some milk.
    Fry some mince in another pan, and prepare some tomato sauce with a little olive oil in another pan.Mix the three together and stuff the cannelloni with this mixture.
    Cook as above

    but if you want you could also use a cheese sauce or you could fill it with ham and cottage cheese or anything you like;)

    forgot to add
    how to stuff cannelloni:
    take one cannellone and hold it in your palm vertically.Spoon the filling in the top.You need to hold it in your palm as it is easier to spoon in the filling and so that the filling doesn't fall out at the other end.Place the cannelloni in a row next to each other.cover with the sauce and bake

    thanks very much R.mac for your kind comments.It's just a matter of planning and finding recipes that inspire you.Let me know how your gnocchi come out.All my friends say they are great!:D yes I use plain flour

    made another pie this morning before going to work:
    got some puff pastry rolled it out on a floured surface and put inside it one round of courgettes ,a round of mushrooms, a round of cherry tomatoes, some black olives and in the centre more courgettes.brushed olive oil all over it.It looked really colourful!Baked it for 35 mins until pastry browned.hmmmmmmmm

    Before going to work?!! Blimmin heck you're good - in the mornings it's all I can do to roll out of bed and grab some tea and cereal before dashing off looking crumpled!!
