Hi as promised here are the recipes:
Cannelloni with ricotta cheese and courgettes (for vegetarians)
I bought the cannelloni from the supermarket and then filled it with the following
cut a big courgette in small pieces and fry them in some oil, when they cool down mix them in a bowl with ricotta cheese and then stuff the cannelloni with it.Make some tomato sauce and spread some of it on the base of teh dish you are going to cook the cannelloni in.Cover the cannelloni with this sauce as well so they don't get dry but don't put too much.Finally grate some parmesan cheese on them and bake them in the oven until they brown for about 30 mins at 180
To make cannelloni with bolognese sauce
make some white sauce by putting a knob of butter (about 50gr.) in a pan and then adding some flour to make a paste (sift the flour) and then add some milk.
Fry some mince in another pan, and prepare some tomato sauce with a little olive oil in another pan.Mix the three together and stuff the cannelloni with this mixture.

I made the loaves and rolls by following the recipe I found here

I put the ingredients in the breadmaker and set it to dough and then take it out divide it into one loaf and 6 rolls and let them rise in the oven for 3 or 4 hours until they double in size and then bake themhalf scottish half italian :100%moneysaver0 -
Turkey and mozzarella balls:
250 gr turkey or chicken
4 slices of toast
100 gr boiled rice
1 egg
half a mozzarella
salt
pepper
flour
oil to fry
tomato sauce
blend in the mixer the turkey/chicken with the toast (not toasted), add the rice,egg,salt and pepper.mix well ,if the mix is too soft add a little breadcrumbs.Make 16 balls and coat them with flour.
Put some oil in a pan heat it when it's hot put three or four balls in it at a time (if you prefer to freeze them you can freeze tehm now and then fry from frozen) and then drain them on some kitchen paper.Add a little tomato sauce (not ketchup) and eathalf scottish half italian :100%moneysaver0 -
sweetcorn and potato fritters:
130 gr flour
1 teaspoon baking powder
1 egg
150 ml milk
50 gr grated emmenthal (or other cheese)
1 tin sweetcorn (400 gr.)
salt and pepper
sunflower oil to fry
sieve the flour with the baking powder in a bowl.Make a well and put egg in the middle, and then add milk.Or you could use the mixer.Add the cheese and drained sweetcorn ,salt and pepper.mix thoroughly.Pour some oil on a non stick pan and put a spoonful of the mixture in it and flatten it with the back of a spoon to form a fritter.Fry 3 or four together.Turn when browned.
you can serve these with tomato sauce.
