advice needed - house sold but neighbour starting dispute!!

Maybe I am reading this wrong but didn't you say the post and fence was put up by the the previous neighbours and you contributed to costs as it benefited you both.
In this case the post and fence belong to the neighbour kicking off and they are on her land so no argument, if she wants to take it down she can.0 -
Unfortunately you will need to disclose this to your buyers. Even though the forms have been completed, you are at risk of being sued by your buyers as contracts have not yet been completed. And your neighbour will most likely take great pleasure in telling your buyers about said dispute when they move in.
I would advise you to disclose the letters and say to the buyers that you are proposing to chop down the post in order to resolve the complaint.
I sympathise with your situation - unfortunately there are a few bitter individuals out there who try to blackmail people when a sale is going through. Your neighbour should realise that if this puts off a prospective buyer, she'll have to live next door to you for some time to come.0
