My favourite is left over roast chicken from the night before.
I take as much chicken as I can from the carcass.
I use an onion (sliced), chillies (if you like that) and garlic. I sometimes add a beaten egg to the chicken. Then fry everything. I use very little oil.
Brown sauce goes well with it.
For the pitta bread I usually have them in the freezer. I find if you sprinkle a few drops of water on it, it puffs up really well, especially the ones not kept in the freezer. I recently did my kitchen up so don't have a toaster anymore. I use the oven grill to heat the pitta bread. Works just as well, but remember to keep an eye on it.
I cut them in half, then stuff with the chicken mixture. Really Tasty.0 -
Haven't had a pitta in years - but when I was younger my mum would make a quick lunch by cutting a bunch of pittas in half, then just chucking some cubes of cucumber, cheese, tomato, any spare meat etc in the middle with some lettuce, salad cream, mayo etc - and we'd all just sit around and stuff them - bit like fajitas, I guess...More fun/social than just handing them on a plate, anyway...
I think I used to have almost anything in them in the lunch box - just wrap it tight in clingfilm...and it works out ok...

Our favourites are:
*Chicken zorba (Recipe below from Delias forum)
*Falafel, houmus and HM tomato and mint salsa
*Corn cakes with chilli sauce and salad
Chicken Zorba
Juice 2 Limes
1 level teaspoon ground corriander
1 level teaspoon ground cumin
1/2 teaspoon tumeric
pinch of salt
1 tablespoon freshly chopped mint
4 boneless chicken breasts
150g tub Greek stlye natural yogurt
170g tub houmous
2 tablespoons olive oil
4 white pitta breads
To Serve: Mixed salad leaves, sliced tomatoes
and yellow pepper
Preparation time: 15 minutes 30 minutes marinating.
Cooking time; 1approx 10 minutes
Serves 4
1. In a bowl blend together the lime juice, coriander, cumin, tumeric, salt & mint.
2. Cut the chicken into thin strips.
3. Add the chicken, mix well to coat chicken, cover & leave
to marinate in the fridge for at least 30 minutes stirring occasionally.
4. Mix together the yoghurt and houmous, cover & chill until required.
5. Heat the oil in a large frying pan an cook the chicken
for 8 - 10 minutes, stirring occaisionally until golden.
6. toast the pita breads on each side under a preheated
hot grill until golden brown or lightly brown in a toaster
7. Cut the pitta breads in half crossways, open up & spread with a generous spoonful of the houmous & yogurt mixture.
8. Fill with the chicken mixture, add salad leaves, tomato & yellow pepper slices.
Serve immediately
We griddle the chicken and use wholemeal pitta0 -
A nice hot pitta filling is hot garlic chickpeas-
Lightly coat cooked/tinned chickpeas in seasoned flour (I put the flour on a plate and then roll them in it), fry in hot oil with some chopped garlic, until they go crunchy and begin to brown, then serve with natural yogurt, sliced tomato and sliced onion. We do this in a DIY way, with everything in dishes on the table so everyone can put in their favourite combination.
Otherwise, any left over stew/sauce or baked beans (sometimes with grated cheese) etc. As another poster said, it's a good way to have a change from pasta!
Cold fillings-
favourites in our house are humus (with salad/tomatoes/grated carrot etc), baba ghanoush (roasted aubergine dip), homemade guacamole,tuna mayo, tinned sardines in tom sauce, anything with mayo so it doesn't get too dry or with homemade coleslaw.

I love pitta bread and always buy them as i find that 'normal' bread makes me sleepy in the afternoon but pitta, being unlevened doesn't!
I put anything i would put in a sarnie, with the added bonus of left over boli and a sprinkle of cheese is def one of the best.
Slice up toasted pitta and dip in anything, homemade guacamole is fab and easy.
My bors fav munchies after a night out used to be toasted pitta fingers with taramasalata.
