DD has asked for fish tomorrow and have some value frozen white fish and it says cook from frozen.....do i just place on a tray?

I'm caught out this week - had to revise everything as I'm trying to get our meals to be lower in fat and be generally healthier. Plus, I completely ran out of time and forgot so I've quickly done them now:
Sunday: Red Thai Prawn Curry with Noodles
Monday: Barbecue Roast Chicken Drumsticks with salad
Tuesday: Sausage Casserole (at Mum's)
Wednesday: Spanish Omelette
Thursday: low-fat beef stroganoff with wild rice
Friday: Sweet and Sour chicken with noodles
Saturday: Meatballs with pasta

Just done a freezer check so am planning the following :
Sun : Lunch - Lamb chops, potatoes + peas
Dinner - Pitta pizzas
Mon : Dinner - Gammon (slow cooked today), potatoes + veg
Tues : Dinner - Fish finger sandwiches (wot?! I *like* them :rotfl:)
Weds : Dinner - Chicken stir fry (chicken in freezer)
Thurs : Dinner - HM Ready meal (Haddock Dauphinoise, in freezer)
Fri : Dinner - Pork chop (in freezer) + chips
Breakfasts - cereal + toast
Lunches - Soup (in freezer) and fruit0 -

Hi frugalswan - I'm also on that tack, trying to get DH to lose some weight without losing too much myself.... How do you make your low-fat beef stroganoff? I would just put it in a dish in the Remoska, love the Remoska for cooking fish - cooks it nicely and keeps the smell in the house down.0 -

It's quite a simple recipe, just using low fat creme fraiche in place of the cream.
splash of olive oil
1 small onions, sliced
300g mushrooms, sliced
1 small glass cream sherry
salt and freshly ground black pepper
1 tsp smoked paprika
1 small tub low fat crème fraîche
cooked wild rice or pasta, to serve
1) Heat the oil and fry the onion until soft. Then, add the mushrooms until they get a little soft. Finally, add the steak and gently fry until juuuuust coloured.
2) Add the sherry. Stir all together, and add salt and pepper to taste, and then add the smoked paprika. Taste to make sure it is to your liking, and then cook down until about half the liquid has gone.
3) Add the creme fraiche. Stir until it is all mixed and lovely looking (about five minutes). Serve with wild rice or wholemeal pasta.
I did it as a test last week to use up some steak (I was going to have a steak sandwich but the healthy me won) and was really surprised with how well it turned out and how simple it was. We both decided to add more mushrooms next time as they went so well in the sauce. Hope that helps

Thanks frugalswan - I am going to give that a go. How much low-fat creme fraiche is a 'small tub' approximately? Sizes are different here, and I usually have a big 500g tub in use. I can't get cream sherry in France (much to DH's regret), but I've used madeira instead before in recipes, so that will probably work here, too.
