For most hosting stuff, storage isn't a problem which is why they can oversell and appear to be offering tons. Bandwidth too, most sites will be low traffic. The problem is that computers need power whether they're working hard or idling.

Virtualisation also helps you do more stuff with one box, but the bottom line is that the more boxes you can fit in your 8 amp rack, the more profit you can make.
