Hi All,
I've got a bag of mixed frozen seafood (mussels, prawns, squid etc) in the freezer. It really needs using up as I've had it ages but I need ideas...the only thing I can think of doing with it is putting it in cream/wine sauce with pasta any other ideas????

I just used up the last of mine too
It is lovely mixed with rice, garlic, tomatoes, paprika, fresh chopped peppers & peas. Making it in to a paella (ish), add some chicken too if you have it. Really tasty if you add a small glass of wine if you have a splash.
Also, it is great with pasta and tomato sauce. Or... you could make a light batter, dip the shellfish in, light fry and serve with salad and garlic mayo or just some fresh lemon wedges.

Paella as suggested would be my first choice, but you could also do seafood lasagne.The ability of skinny old ladies to carry huge loads is phenomenal. I like mine lightly pan fried in olive oil, a pinch of lazy garlic and then add some cooked hot pasta. Stir and serve. (with optional large glass of white wine)

I'd go for paella too, but failing that, the good ol' seafood "canneloni" without the canneloni - make a thick(ish) cheese sauce, chuck the seafood in it. Use to fill rolled up pancakes (HM or Tesco's 99p for 8 - whatever floats your boat). Top with a smidgin more cheese sauce and grated cheese. Cook in hot oven until heated through and the cheese melted and golden. MMMMMMMM!!!!!!0

Hubby went shopping and for some reason got lots of seafood in packets (prawns, mussels etc) which can't be frozen again. Now I'm sure we can cook them and then freeze it but I need some ideas of how to cook them for freezing. Any bright ideas? I can't seem to think of anything! Unless I pan fry them and then freeze and then possible use on pizza next week?

How about something like seafood laksa, make the sauce for freezing then reheat and mix with cooked noodles

This answers the question about freezing mussels, what else is in the mixture?
