Whole chicken, no oven. Help Please!

My oven packed in last week and we are waiting for it to be fixed. In meantime I forgot and ordered whole chicken from butcher. Looked at recipes for pot roast chicken, but they all say, 'put in oven' to finish cooking. Can I cook it gently in some liquid with veg on top of stove and have it stay nice and moist? Any good recipes?

    Nothing wrong with your idea, only drawback it will not be brown but when you get it out, just take the skin off and it'll be fine.

    Do you have a slow cooker? Or access to one? Pressure Cooker? Rotisserie? Barbecue?

    It can be put into a large saucepan, covered with water, brought to the boil and simmered for around 2hrs - need to keep it covered with water though. Will not be browned but will be very tender - similar to slow cooking but quicker iykwim ;).

    If you want a 'roast' chicken then I suggest that you brown in on the breasts in a little oil in the pot you are going to cook it in, add chopped onion, garlic, stick celery and any other veg you fancy ( bulb fennel is really nice cooked like this), add small amount of water and sit chicken on top of veg....keep an eye on it to make sure that there is enough liquid, about an hour in add the rest of your veg (or cook separately if you prefer). Chicken is cooked when you can easily pull leg away from body...enjoy

  • I poach mine in water with some herbs and veg put a lid on and just leave on to simmer for a an hour to an hour and a half the meat is so juicy and tender

    Good tip marie. Celery and chicken works well, but hadn't thought of using bulb fennel.:T I've got 2 turkey legs left over from christmas and will try fennel with them.

    Do you think the liquid left over would be good for soup, gravy or both, with the fennel in it?
  • The poaching liquid will definitely be good for soup.

    I roast a chicken like this in the oven anyway. Then I get two lots of stock from it.
