I assume from the fact that you're asking about unlocking that you're not an O2 customer. If you are unlocking the phone is not necessary.
If you go into Settings > General > About, you can see the software version of the iPhone you got. If it is 2.2.1 or less you will be able to jailbreak the iPhone using QuickPwn (if you're using Windows) or PwnageTool (if you have a Mac) which you can get from http://blog.iphone-dev.org.
Once the iPhone is jailbroken you can use the Cydia installer to install the yellowsn0w package, which will unlock the iPhone.
I think that is the most reliable and safe way to unlock, however you may find it easier to use one of those 'unlocking' SIM cards which you insert together with your SIM and will allow the iPhone to be activated and work.0
