I think the 2 nicest recipes I have made recently are the baked sweet potato with spicy feta salad and the butternut squash risotto I got from the BBC which is gorgeous - however I just added chunks of the roasted butternut to the risotto at the end, rather than mashing them and I also used much less wine - about 2 tablespoons rather than a wine glass as when I have added a lot of wine to a risotto in the past it concentrated the wine flavour and it was too overpowering. As a main course it also only served 2 people (large portions) rather than the 4 the recipe claims... that included a small second helping each as it was so yummy!

How strange it that - I was just about to post that I'm hoping to try out a butternut squash recipe tonight or tomorrow (depending on the use-by date of the Turkey we bought on Sunday). the recipe i have is from a farmer's autumn fair, but is similar except it also has butterbeans in it.
I tried out Nigella's chocolate and cherry cakes last weekend. It was very nice and doesn't need any icing as is sweet enough without.

Here we go
you will need
potato,s
ham
smoked cheese
normal cheese
take a spring loaded deep cake tin
mash your potato with butter and milk (not to much as you need it to be quite a solid mash)
then just do alternate layers of mash, ham and smoked cheese (can use normal cheese if pref)
once your at the top of your tin sprinke the top with normal cheese and bake in a medium oven until golden brown
it took me quite a few goes to get the potatos right as if there to sloppy when you take it out of the tin it just colapses but still tastes yummyOfficial DFW NERD 189
