re the sandwich idea - if you do want to go down that rote but are worried that bread might be too thick for him to handle, just give it a good going over with the rolling pin. problem solved!

What about savoury pastries and HM breadsticks? I've made these for the children I childmind and they've always been a big hit.
Make a basic shortcrust pastry, roll out and sprinkle with finly cut ham and cheese or spread with marmite and cheese, fold, reroll and cut into fingers before baking.
For the breadsticks I make a basic pizza dough, add some grated cheese and herbs. I roll into sausage shaped sections, give them a twist and brush with a little milk before baking. thick mashed potatoes are good
i made all my dd's food (totally organic too, shame we can't afford that now)
i also mashed in roasted garlic and very finely chopped onions (sauteed til soft) and now dd loves both
