Im making a toad in the hole tonight, and thought id be a bit different with my accompanying veg, and do some roasted sweet potatoes with it. I was thinking i could do a mix of normal roast potatoes and sweet roast potatoes, with some carrot and brocolli alongside.
Unless anyone has better ideas for accompanying veg? maybe a cauliflower cheese and some roast potatoes instead?
And then onto step 2, whats the best way to do roast potatoes/sweet potatoes? Ive read you just stick them in some olive oil in the oven for an hour on 160?

I like to do a mix veg bake sometimes (its quick and easy
) and sweet potato goes very well in it. I cut up what ever veg I have around, butternut or pumpkin, sweet pots, normal pots, courgettes, baby gems, mushrooms, onion, peppers etc. I sprinkle with herbs or rosemary (depending on what we are having with it) with a blob of butter and bake in the oven for 30 mins or so until all done.

Sweet potatoes cook at about the same speed as parsnips, so quicker than potatoes. I did some at the weekend, tossed them in olive oil, paprika and garlic and a bit of salt, they were lovely.GC Oct £387.69/£400, GC Nov £312.58/£400, GC Dec £111.87/£4000

if you drizzle honey over sweet pots before cooking they're beautiful. or chilli oil is also lovely with them.Unfortunately,

lovely i have just bought some sweet potatoes and was wondering how to cook them0

I put them in foil and bake them in their jackets . serve with a knob of butter -lush!
In answer to your question I would do a mediterranean mix, Aubergine, onions, courgette and tomatoes , drizzle them with a little olive oil and a clove of garlic or chilli they only take about half an hour - lovely with chickenBlessed are the cracked for they are the ones that let in the light

This recipe for roast sweet potatoes (kumara is a kiwi kind of sweet potato) is absolutely delicious.

Every so often we may have sweet potatoes cooked in the oven with sweet peppers, courgettes, baby potatoes etc.
The only thing is the sweet potatoes are always soft, not crunchy like normal potatoes when oven cooked.
Is this just one of those things, do sweet potatoes never crisp up in the oven or am I doing something wrong?0 -

The only way I have found to get sweet potatoes to crisp up is by cutting them (skin on) into thin rounds, a drizzle of oil, sea salt and black pepper and roasting them -sorry I don't time things so its a "check and see" -they are one of my faves..drizzled with balsamic mmmmmmmmmm-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -
My roasted sweet potatoes never go crunchy either but do seem to fair better with their skins left on. Have you tried roasted butternut squash as well? That is yummy!0

Hi there - I think most people use olive oil for roasting veggies which is absolutely delicious, but for some reason sweet potatoes seem to prefer vegetable oil - only needs to be brushed or slightly drizzled on - with some sea salt.
