    Where are you buying your sweet potato from? I've noticed when I buy sweet potatoes from the supermarket they are very soft. That's because they come from Israel (I think it's Israel). The potatoes that I use to roast are from West Africa, they are more starchy than the other ones.

    Thanks for the advice and info folks, I am glad I am not the only one who can't get them to go crispy!

    I buy them from Tesco normally, not sure what country they originate from.

    I've been cooking a lot with rapeseed oil lately and I've found that it seems to make things crisper than if I use olive oil. I prefer the taste too. I find that if I rub the skins of sweet potatoes with oil, sprinkle with a little salt and then roast them it makes them nice and crisp on the outside - the inside is always soft and mealy, I think they're just a 'wetter' vegetable generally. Cubing them up and drying the cubes off really well can help too, and turning them regularly in the oven helps to crisp up all the sides too.
