What to do with Lamb Shoulder Fillet?

Hi

having discovereed a love of Lamb but without an income to match the cutlet needs for a family of 5 I have bought a shoulder fillet but need some ideas how to cook it.

I'd quite like to just roast it and have it with potatoes and veg and gravy but no idea if it needs pot roasted or not and no how to make lamb gravy!

I'm not as useless as I sound- just new to lamb!

Can you help.

    i would slow roast in in my slow cooker with a bit of gravy and mint urmmm love lamb enjoy

    Slash it a few times, then marinade it in olive oil, lemon juice and oregano or rosemary for a few hours or overnight if possible. Then slow roast it in the oven. Make gravy the same way as any other roast. I add flour to the meat juices, stir till absorbed. Add veg water, and a bir of gravy browning, and simmer on the hob till thick.

    After slashing it lots of times I insert slivers of garlic then lay rosemary over, cover in foil and slow roast for a couple of hours. Lamb, garlic and rosemary are just made for each other! With any leftovers, mince it up and mix with leftover gravy to make the base for a shepherds pie. HTH.

    Make the gravy with red wine and redcurrant jelly. It's fantastic.

    I chop it into bite size pieces and roast slowly (casserole, really) with onions, aubergines, tin chopped tomato, garlic and rosemary and if I have it a squirt of balsamic vinegar. It makes it all very tasty indeed, good with baked pots and something green. Oh dear I think we might have to have that today now..........

    I put it in a roasting tray - add loads of chunked peeled potatoes, cut a couple of lemons into chunks, pour over several cans of tomatos, chuck in lots of garlic cloves, sprinkle on some oregano, S+P. Cover it all with foil and roast in the bottom of a slow oven - 120 degrees C....all day.....seriously....all day! It's luverly and Greek!

    If you like lamb, breast is very good, and I buy it from the butcher for £1 to feed 4 of us. I roll it around breadcrumbs flavoured with cinnamon, sultanas and apricots, then slow roast on a rack to let the fat escape. It then slices really easily.

    Our butcher has recently put the price of lamb breast up from £2.50:eek: to £3:eek: :eek: :eek: . You're getting a really good deal there. I love it but feel I may as well get a joint of pork for that price.

    You could try curryficating it. Chop the lamb into chunks. Brown the meat first and put aside. Then fry onions, garlic, ginger and chillies (optional - I like it hot!) in the same pan. Put the meat back in. Add your favourit currypowder or paste, a tin of chopped tomatoes and a tin of coconut milk. Let it simmer until it is meltingly tender (this will take a while) and serve with rice, lentils, etc. You could stretch it with some red lentils and potatoes. The shoulder fillet is great for this because it has a good amount of fat to it.

    I am feeling hungry now. Good thing I'm having curry for dinner tonight!
