Lamb shoulder

i bought a 1/2 shoulder of lamb yesterday and not quite sure what to do with it any advice gratefully recieved.
Other women want a boob job. Honey the only silicone i'm interested in is on a 12 cup muffin tray, preferably shaped like little hearts :heart:

    I would roast it :drool:

    Put a couple of cuts/slashes with a knife in the top of it, push into the slashes a sprig or two of rosemary from the garden (or, sprinkle on approx a tsp of dried) and then roast for approx 25 mins per lb and 30 over that (so, if it's 2lb in weight, that would be 50mins + 30 = Ihr 20mins) leave it to "rest" for about 15mins before you cut into it.

    Otherwise, usually with leg, but it will work with shoulder, cut most of the meat off in chunks, with no need to be too precise. Put chunks and bones into a casserole dish or slow cooker plus water to cover and cook (casserole very low) for about five hours. Remove bones. Any meat left on the bones should fall off.

    Take out most of the liquid to use as stock some other day.

    Add chunky chopped leeks, carrots and potatoes, stock cubes salt and pepper to taste and cook on low for a further two hours.

    In the last hour add some cornflour that's mixed with water as a thickener.

    If you (or anyone else rading this) has a big enough slow cooker - put it in there. I always do my lamb in the slow cooker now - just as long as you don't want to slice it with your lovely carving knives. A couple of teaspoons will do :D

    Just add herbs as above, a pint of boiling water and leave on slow all day.

    Note: Shoulder has a higher ratio of fat than leg.

    If you intend slow cooking it, you will either need to skim off most of the fat before using the liquid as stock ... or, let it go completely cold; the fat will solidify and you'll be able to simply lift the layer of fat off the stock and then reheat.

    Oh yes - forgot to say - I have one of those fat separator jugs which makes it really easy to get all the fat off - just don't pour the liquid in when it's too hot or it will crack the plastic jugs.

    Shoulder also also very good when stuffed and rolled, then roasted ... or am I thinking of breast of lamb :doh:

    That's breast ;) Speaking of breast, I used to make "crispy ribs" from that, the butcher looked at me in shock when I insisted I didn't want it "boned", then I would chop it into ribby lengths at home, like fingers, and roast them :drool: :drool: :drool:

    Breast of lamb is very money-saving. But you'll not see it in the supermarket. Simply ask the butcher and he'll sort it out for you

    I've seen it in Tesco's .... £2.99!!! :eek:

    Mind you, even the town centre butchers are selling it for £1.50 each ... not that long ago you could snap them up at 50p each!

    thanks for the advice might roast it then... although i love my slow cooker it still doesnt have that lovely 'roasting' smell yummy....
