Anything with salted peanuts?

I have a huge bag of salted peanuts in the cupboard unopened from xmas. Is there anything exciting I can cook with them other than just eating them as a snack?

this is a really nice slightly spicy dressing, particularly nice with rice &/or tuna
2 Tablespoons oil
1/2 teaspoon black/brown mustard seed
1/4 teaspoon ground cummin
1/2 teaspoon salt, only if peanuts are unsalted
pinch turmeric
2oz roasted peanuts, roughly crushed/ground
2 Tablespoons lemon juice
heat oil
fry mustard seeds till they pop
remove from heat & add cummin, salt if using & turmeric
cool, add nuts & lemon juice
good with rice or green salads
another nice thing with rice salads is to add a handful of Bombay Mix or other similar snack just before serving0 -

squeaky's dead right about the salady thing, here's one of my favourites (dressing is a bit similar to my previous post, but I'm a sucker for those flavours
)
Koshimbir
2oz roasted peanuts, lightly crushed
1 large cucumber, peeled & chopped in 1/4" cubes
2 Tablespoons fresh grated coconut*
1-2 small green chillies, very finely chopped
2 Tablespons lemon juice
1/2 teaspoon sugar
1/2 teaspoon salt (if needed)
1 Tablespoon oil
1/2 teaspoon black/brown mustard seeds
1/8 teaspoon chilli powder
in a bowl, mix peanuts, cucumber, coconut, chillies, lemon juice & sugar
heat oil in a small pan, put in mustard seeds
when they pop add chilli powder
stir once & pour over contents of bowl
stir to mix
taste & add salt if needed
serve at room temperature
adapted from a Madhur Jaffrey recipe (I think)
* fresh coconut's a hassle to do for individual recipes, but when you prepare & grate one, freeze what's left & you have instant fresh coconut any time you want it
following on from jobbingmusician's suggestion about making peanut butter, I remembered this recipe. I haven't made it for many years, but at the time I found it surprisingly nice. hope my memory isn't playing tricks
Peanut Butter Soup
1oz butter or marg
1 oz flour
1/2 pint milk
1 bay leaf
2-3oz peanut butter
1 pint stock
salt & pepper
make a white sauce with butter, flour, milk & bay leaf
put peanut butter ina small bowl & blend in some of the sauce
return to the pan & mix well
add stock & seasoning
serve with croutons
and they're very nice crushed & sprinkled over your favourite eastern noodle dish0 -

My mum always adds peanuts to rice salads, but wash the salt off first or else it drowns out all the other flavours.
