It's easy peasy
1 oz flour
1 oz butter
Melt butter in pan and stir in flour until you make a roux (sp). Gradually add 1pint milk - stir continually. Add grated cheese once milk has come to boil I use roughly 6 oz although I dont weigh, I just make it up as a go along. Use a whisk to ensure cheese is mixed through suace.
This is how I make it - I imagine someone will be along to correct me!! Mine always tastes ok tho!0 -
Don't forget to add grated nutmeg or a little dried mustard powder to enhance the flavour.0

I always add 1 tsp of mustard and the kids like it if i add some mozerella (sp) as the sauce goes all stringy!!!0

If you want to splash out you can add some white wine in stead of some of the milk. :beer:
I always use strong cheese, then you need to use less.
A basic white sauce (no cheese) is great with so many dishes, and adding a veggie stock cube works wonders in it.Amazon Sellers Club Member Number 52

Jodi - with the roux method just make sure that you keep the pan on a fairly high temp (I usually put mine on a 4 setting - mine go up to 6 on the hob) and keep stirring. Add the milk a bit at a time (especially at the start) only adding more when the first lot's been absorbed / taken up.
It might look a bit lumpy initially but keep stirring and it will be lovely. I agree with the addition of the mustard powder - lovely. A friend of mine adds a pinch of cayenne to spice it up too

Jamie Olivers really easy cheese sauce, is a pot of creme fraiche, a couple of handfuls of grated parmesan, mix it up, then top of with a handful of grated mozzarella.
