    I just make an all in one white sauce and grate cheese into it according to taste.

    25g/1oz butter
    25g/1oz plain flour
    300ml/½ pint milk
    salt & pepper

    I heat it all together in a saucepan stiring all the time.

    I use the same recipe as Rikki for my white sauce, when im making it into a cheese sauce i also add a teaspoon of mustard, not sure how, but it really brings out the taste of the cheese!!!! (also i use s/r or plain flour, it doesnt seem to matter)

    I use half a pint of milk, 2 teaspoons of cornflour, half a teasp of mustard powder, pepper, cube the cheese.

    Put the milk in a pan over a low light, add the cornflour and mustard powder, stir briskly, I use a lakeland mini wisk, as it starts to thicken up, add the cubed cheese and stir untl the cheese is melted, add the cooked macaroni and tip into a greased dish, it needs to be quite sloppy as the macaroni will absorb some of the liquid as it cooks. Sprinkle the top with grated parmesan and paprika pepper, cook in the oven gas mark 5 for about 45 minutes.

    To cook the macoroni I put enough in the dish I am going to use to well cover the bottom, tip into a pan of water and bring to the boil, then turn off the heat and leave for about 12 minutes, the macaroni will be just right......

    If have food processor - grate cheese in it or rather chop it then add your flour, milk, mustard, butter, salt, pepper etc - zap for a few seconds then put all into pan and bring to boil - lovely stuff
    Saving in my terramundi pot £2, £1 and 50p just for me! :j

    After a recommendation on OS, I use Carrs Sauce Flour (49p a little bag in Tescos - it lasts for ages. In the flour section).

    25g of sauce flour whisked into 1/2 pint of milk. Stir over gentle heat until it thickens. Stir in some grated cheese and a sprinkle of mustard powder.

    Stir into cooked maracroni and pour into an ovenproof dish.

    Sprinkle a mix of breadcrumbs and grated cheese over the top and pop into the oven to brown. This makes a lovely crunchy topping to the macaroni cheese (and is also very nice over cauliflower cheese - just substitute cooked cauliflower for the macaroni).

    also try cooked bacon ( if you are not veggie ) to the sauce and tomatoe slices to the top and place in the oven.

    I do mine like this.......
    Get your macaroni dish ready.
    put on a pan of water and bring to the boil,

    Put some pasta/macaroni(half a small bag) into boiling water and put on a low heat and simmer.

    Chop a small onion and fry/ cook in a small amount of olive oil (or other fat of your choice)until browned.

    Add 2 tablespoons of plain flour and stir in until its a thick paste.

    Add some milk (3/4 pint approx) and keep on a low heat until it bubbles. Add some black pepper, 2 generous squirts of tomato sauce and some cheese of your choice.(4-6 oz red leicester or another off your choice)
    cook until ready,take off the gas.
    Take pasta off the gas and check its ready. If ready, drain and put in the dish that you should have already. Add made up sauce. Top with grated cheese and brown in the oven or under the grill.

    I am not a cook that generally weighs or measures so this might not be specific enough, but mine comes out fine every time and my kids love it.

    How do you make cheese sauce, I am going to try it tomorrow night but dont have a clue how to make it at all.

    I use the all in one method in my delia book. Get a pan, put in flour, butter, milk, some freshly ground pepper, sometimes a bay leaf and cook on a low hob stirring (I usually stir with a balloon whisk or a small wooden spoon) until it thickens. Add the cheese (grated) when the sauce has thickened.
