I've used gruyere when self-catering in France when cheddar not available. It'll be fine.0

Thank you all, I am relieved.
It does taste ok.
It is typical, my mother in law is famed for her Fish Pies and my husband's aunt said how amazing mine was, so she wants to try it.
Probably unconscious nerves about her trying it that it all went a little pear shaped.
I managed to get the mash a little sloppy, but it is holding the fork marks well, so it will probably be like smash!
Still probably do me good not to beat her fish pies!0 -
Gruyere is delish! I reckon you've probably made it better (in my opinion!)

Try not to be straitjacketed by a recipe. It is not against the law to think for yourself when using a recipe - Delia won't know;) and just because she makes it with Cheddar doesn't mean it is going to be no good with GruyèreI made macaroni cheese the other day with some Stilton in the sauce and it was delicious.
Gruyère makes fantastic cheese sauce imo.0 -

Thank you. The problem is I am so unconfident when it comes to cooking. My mum never home cooked in her life and all my dad did was a roast and minced beef, the rest we were brought up out of a freezer!
So I try to try a new recipe on average every month, and put it into my list of safe recipes, that I know I can roll out. The problem is when I have a problem like this I panic as I don't know what is a good substitute and what isn't.

I see a recipe as more of a guideline, and if I haven't got something then I can use something else instead, or if I have something I need to use up then I can use that instead of something the recipe calls for. Also you can change herbs and spices, I'm not a bit fan of rosemary in food, so I'll use something else that will fit with the rest of the flavours in the recipe. If you smell things together that will give you an idea of whether they'll taste ok together, then as you get more confident you'll try out different combinations of flavours and then won't even think about it any more and just chuck any old thing into your saucepans
