i shall watch this thread with interest... and if my search shows anything up, ill be sure to let you all know... am surprised at the lack of authentic mexican food retailers in the uk..
.... if you live in/near london, you could always head down to the casa mexico store maybe? atleast you'd save on delivery0 -

I found this recipe yesterday, was going to make them today but had some beef casserole in the fridge that needed eating. Not sure how it compares to recipes other people have used.

I use this recipe originally posted by Mrs McCawber, I copied it from the OS site somewhere but I can't quite remember where. I can confirm that they are both chewy and soft however:D. Oh and very tasty too!
CHEWY SOFT FLOUR TORTILLA
2 CUPS PLAIN FLOUR about 300g
1 ½ TSP BAKING POWDER
1TSP SALT
2TSP VEG OIL
¾ CUP WARM MILK -180ml
Sift flour and baking powder into a bowl
Whisk milk, oil and salt
Pour into flour -stirring to mix
Once mixed -turned out onto a lightly floured worktop and knead for 2 mins
Cover and leave for 15 mins -it won’t rise but needs to relax
Cut into 8 balls (approx 50g each)
Cover and leave to relax for 10 mins
Roll each one out into a round -approx 8”
Heat a heavy frying pan (preferably cast iron)
Drop in one tortilla and turn after about 2 mins -the surface should bubble -press down with a teatowel (watch you don't steam your fingers )
Place inside a dry tea towel to keep warm whilst you cook the rest
You can freeze the balls of dough too... when they are defrosted they will be a bit stickier so you will need more flour when rolling out-but they roll out bigger after freezing too0 -
I bought a tortilla press & the Masa Harina* but confess I haven't got round to using it yet
in spite of making Cochinata Pibil recently, which was delicious but would probably have been even nicer with soft corn tortillas than the rice I served it with
a tortilla press won't work with wheat flour tortillas/wraps/chapattis & might well break, so if it's flour ones you want, best to stick to bought or rolling them out yourself
EDIT ... bear in mind too that a press (unless you've built your own) will only make up to 15cm tortillas
* not cornmeal, maizemael, polenta or cornflour, none of those will work0
