    A Delia Smith recipie I use for lamb chops cooks everything in one roasting dish. To the chops add potatos, carots, parsnips, onion, all cut to roughly the same size a few crushed garlic cloves, sprig of rosemary a pinch of thyme. Drizzle with a tiny bit of olive oil, season cover with foil and cook in a lowish temperature until cooked no exact time but the slower cooked the better really. Remove the foil for the last 20 minutes or so. Easy peasy and very tasty.

    I would chop the rosemary very finely, and coat chops with it....can you put chops on rack over the veg and roast in this way?...even a cooling rack placed across top of tin with veg in will work...you can turn chops half way through to crisp both sides

    I made a fab job of dinner! *blows own trumpet*

    In the end I made a tray of roast veg (parboiled little spuds, 1 parsnip and carrot, 1 courgette, couple of tomatoes and some shallots, olive oil and mixed herbs) put them on hot. After 20 mins they were well on their way, so changed oven to fan/grill and put the chops in, they were supposed to take 20 mins, but after 10 the veg were done, so I just put the grill bit on and left for another 10 mins. Really delicious. MIL and DH had some lamb gravy I got out of the freezer, but the tomatoes collapsed and there was sufficient olive oil on the veg to prevent them being dry.

    Got some coconut macaroons out of the freezer to have with some coffee afterwards. DH asked MIL if she will cook for them next Saturday when I'm in Harrogate again and she said yes. Will be 'cheaper than chips' LOL! which is what they often do when I'm not there.

    It always seems to me that the best meals are good quality ingredients cooked simply.

    I didn't think it was possible, but I have too many lamb chops! I've taken too many out of the freezers, the OH's out tonight and although I'm a greedy piglet I can't eat all of them.

    Anything I can do with 'em? Shall I cook 'em all?

    Are they defrosted :confused: If so, you shouldn't re-freeze without cooking them.

    they make the most lovely curry......you can always freeze it when cooked too :D

    Having the partner's daughters over at the end of July and I've been sorting out my meal plans. I've got some gammon...and a recipe to try, chicken, fish, spag bol....but I found some lamb chops reduced and bought enough for the 4 of us.

    Problem is I've never cooked them before and haven't got a clue what to do with the things.

    Suggestions?
