    How about carrot, apple hummus wraps for lunch? put a dollop of hummus on a wrap, shredded carrot, sliced apple (green apples are best), some spinach leaves and roll up. Yummy! Although with a kilo of carrots this won't put much of a dent in it.....:eek:

    P.S. I found stardrops in my local poundland, just thought you'd want to know...going to post it on the stardrops board when I find it....

    (There are only a couple of poundlands north of the border, and nowhere near me unfortunately! going to try Asda tonight, fingers crossed)

    Thanks Champys - I love my veg but ironically have never tried anything totally veg orientated, I usually have it as an accompaniment to meat, thank you for the idea!

    Aeshna I make this for example when vegetarian friends visit, and then I serve it with oven-roasted chicken legs on the side for the non-vegetarians.
    The legs and the bake all go in the oven at the same time and everybody is happy. Add a green salad for extra colour........

  • I ate in a pakistani restaurant a while ago and had carrot halva -it was divine! It is very sweet but good after a spicy meal!

    same here get the big bags of carrots from the market end of the day for about 50p a large bag same with onions and tomatoes

    process them all up and freeze and use as i go along

    reminds me due a market run in next couple of weeks make sure i got some small freezer bags LOL

    Our family love this carrot halwa - I omit the 2 cups of ghee/butter though.

    Fry a kg of shredded/grated carrot in a tsp of butter until colour changes, add a can of evaporated milk and sugar (to your taste - I add until I think its sweet enough - 1/2 cup) and cook on low for around half an hour until the milk dries up (keep stirring), add some sultanas and a good handful of cashewnuts/almonds. Serve/freeze.
