Aeshna I make this for example when vegetarian friends visit, and then I serve it with oven-roasted chicken legs on the side for the non-vegetarians.

I ate in a pakistani restaurant a while ago and had carrot halva -it was divine! It is very sweet but good after a spicy meal!

I would freeze it, I shred my carrotts in my food processor in bulk then freeze them in small bags and when I am ready to make a pot of soup I just throw it in the stock - I dont even defrost it.
same here get the big bags of carrots from the market end of the day for about 50p a large bag same with onions and tomatoes
process them all up and freeze and use as i go along
reminds me due a market run in next couple of weeks make sure i got some small freezer bags LOL0 -
Our family love this carrot halwa - I omit the 2 cups of ghee/butter though.
Fry a kg of shredded/grated carrot in a tsp of butter until colour changes, add a can of evaporated milk and sugar (to your taste - I add until I think its sweet enough - 1/2 cup) and cook on low for around half an hour until the milk dries up (keep stirring), add some sultanas and a good handful of cashewnuts/almonds. Serve/freeze.0
