I always use grated carrot when making burgers or meatballs. The carrot adds "moisture" so you don't need to use an egg to bind, and it disappears when the burger is cooked (my OH hates carrots but has never noticed them in the burgers) leaving a lovely juicy burger. If you like indian, you can make an excellent raita with shredded carrot and crushed salted peanuts.
Mix them with yogurt, a little salt and sugar and some very finely chopped raw chilli.0 -
You could try mixing it with grated potato for a rosti.0

Hiya,
I usually grate 3 or 4 carrots into a pot of ham hock and yellow split pea soup. That would use up a good few handfuls of your carrots.

I would freeze it, I shred my carrotts in my food processor in bulk then freeze them in small bags and when I am ready to make a pot of soup I just throw it in the stock - I dont even defrost it.0

Thanks very much masonsmum - time might be tight for me to do as much batch cooking/baking as I'd like, so that's good to know.
I've got so many ideas now, I'll probably not have enough carrot to do everything I want to :rotfl:

How about carrot, apple hummus wraps for lunch? put a dollop of hummus on a wrap, shredded carrot, sliced apple (green apples are best), some spinach leaves and roll up. Yummy! Although with a kilo of carrots this won't put much of a dent in it.....:eek:

Grated carrots are also brilliant in a veggie bake - I make one involving mostly carrot, mixed up with some grated cheese and wholemeal breadcrumbs. Separately, you fry some chopped onions, garlic and a good quantity of chopped mushrooms with some herbs (thyme, basil for example) and seasoning, and once it's soft, add it to the carrot mixture. Add a beaten egg, mix well and pack it all in an ovenproof dish, loaf tin or small roasting tin. Top with more breadcrumbs & cheese, sesame seeds (all optional!), dot with a little butter here and there and bake in a medium oven for about 45 mins.
