1kg Shredded Carrot

Hi everyone
I just got back from my local Morrisons (after a frustrating and fruitless hunt for Stardrops, but that's another story, another thread!) and couldn't walk past this whoopsie - a 1kg bag of shredded carrot which would normally be used for their salad bar, but the 'use by' date is 12 March :rolleyes:, so I got it for a bargain 25p!!!!
As much as I tend to ignore use by dates, it's packaged in a plastic bag so I know not doing the carrot much good. I had planned to make some lentil soup in the slow cooker and figured I could use a lot in there - any ideas for the rest of it? Am I right in thinking that I could simply portion it up and freeze it?

Mix some of it with grated apple and some sultanas or raisins and it makes a lovely salad! I don't know if you could freeze it - it might go all slimey and mushy when you defrost it.Jane

use it to bukl up anything! I use for tuna mayo, and bolognese and lasagne. Could you also make carrot and coriander soup?A little nonsense now and then is relished by the wisest men :cool:

I think it will go a soggy when defrosted, but it'll be fine for soup or cake/muffins.
I like grated carrot mixed with grated cheese and mayonnaise for a sandwich filling.0 -

Lots of great ideas, thanks all! I would never have thought about carrot cake - as a rule, I don't bake, lol, but now is maybe a good time to try! I need to do my 'meat' shop tomorrow night so maybe I'll have a couple of days of making up batches of stew/mince/bolognese that I can use it in. Tessie bear, great idea, I LOVE coleslaw but have never attempted making it myself. I'll have a look and see if I can find a recipe here on MSE! I've never seen this whoopsied before, but I'll be on the lookout in future!

Hi ariba, thanks for that - other posters have suggested that it'll go a bit mushy when defrosted, but I dare say that if it's going in a stew or similar, that won't matter too much - have you tried this before?
