Pineapple has an enzyme in it that breaks down protein, this includes gelatine. You can safely use a tin of pineapple as it has been heat-treated and the enzyme destroyed.2008 Comping ChallengeWon so far - £3010 Needed - £230Debt free since Oct 20040 -
Thanks thriftlady, I meant to serve the mousse with the pineapple - didn't explain myself very well!0

black-saturn wrote:I've had a can of evaporated milk and a jelly lurking in my cupboards for ages and I made a mousse out of them. Heres how:
Boil half pint of pasteurised milk in a saucepan and add to the jelly cubes,
Stir till dissolved,
Add half pint of evaporated milk and leave to set.
It makes a lovely creamy mousse type dessert and is a nice change from ordinary jelly.
Our family call this Jelly Flip. I don't make it any more though as my 2 kids don't like it.
I can't justify making one to eat myself, though I'm sure I could manage it if I tried0 -
This takes me back to the 70's when I was little - my Mum made this all the time - although I think she just whipped the evap and mixed it with the cold jelly. My Dad used to make a jelly and let it set a bit and then pour a pint of custard into it in ribbons and let the whole thing set - it was lovely. Off to make the jelly and evap now though - only thing is I only have sugar free jelly - I expect it won't make much difference but it will be less calories (so I can have MORE!!!). BTW the pineapple thing is also true for Kiwi fruit - that makes jelly not set too.Jane

I remember making this at school - I got told off by my home economics teacher because my jelly curdled. I'm still not sure what I did wrong...It's better to beg forgiveness than ask permission.0

another nice way to have jelly a bit different which we do is to make the half pint up with hot water, then add lemonade (diet if your on a diet and using the sugar free jelly) and leave to set, makes a lovely fizzy feeling on your tongue when you eat it. my dd loves fizzy jelly, she always asks for it if a friend is coming for tea, to see the look on there face when it fizzes when they eat it. lol.£2 saver club 30th sept 198 £2 coins = £396(£350 banked)0
