One of our favourites is strips of chicken marinaded in ground cumin and rubbed coriander, then stir-fried with half each red, green, and yellow pepper, half a courgette, a carrot, an onion (or a bunch of spring onions) and a clove of garlic, all sliced in small strips, then fried in very hot oil, with a tablespoon of curry paste (Thai is delicious) added. Serve with noodles. This is so easy and takes about ten minutes to prepare, and twenty minutes or so (making sure the chicken is cooked through) to cook.
