    Thanks for the hugs - Id really like the cheesecake recipe too please!

    Am in need of a chocolate fix (sorry to those who have given up for lent) and I love cheesecake. Think this would cheer me up no-end! Want to drink wine tonight and feel proper sorry for myself, but did that last night and need a hard kick up the backside to get on with it!

    ETA - checked my bank account today and have had a payment from the Tax Credits of £400!! They say that things come in threes, so maybe I will get my list finished and that will be my three good things for today. :rolleyes: Its for the best really. Deep down I know that - just need to pick myself up from feeling sorry for myself and get on with it. Easier said than done sometimes though!

    White Chocolate Cheesecake

    250g digestive biscuits
    125g butter
    2x200g white chocolate
    250g cream cheese(philadelphia)
    250g marscapone(or you can use 2 tubs of cream cheese)
    1x258mls double cream

    Base
    Crush biscuits,melt butter,add to biscuits,mix well till bonded.
    Line cake tin (sprung one is easiest but not necessary)with greaseproof paper,use spoon to press biscuit mixture into place.
    put in fridge

    Filling
    Break chocolate,melt over pan of hot water
    Add cream cheese and double cream.
    Mix thoroughly but not too much or it will be too stiff.
    Pour into base.
    Leave in fridge for 3 hours to set

    ENJOY
    Feeding 6 Adults 1 Teen a 8 year old with hollow legs and a very fussy 5 year old. Also 3 cats and 3 fishies
    To include all Food,Toiletries and Petfood.

    A bit late cause I had to go find DD who had gone too far up the lane on her bike and I couldn't see her but I'm gonna do a HHc instead of ironing and watch Noel at 5:15, so HHC commencing.........NOW............

    Rosepink - Just finished knitted evening bag (they don't take long to knit only 21 sts on 12mm needles) but got lot's of hedgehogs knitted but need sewing & stuffing!!! :rotfl:

    MO5 - Thanks for the cheescake recipe, next time I go shopping I will get all the ingredients. I'm just going to try one of the Ald* recipes for 'Spiced Christmas Chocolate Fridge Cake', never got round to making it at Christmas so I'll try it now & re-invent it as Easter Fridge Cake.

    Jo - hugs for you, posted your parcel this morning.
    mummyof5/white choc cheesecake - I make that verison too - it is from Good Food a couple of years ago, I am told it is lovely by everyone else although I am not keen myself. Works well with Aldi 65p philly equiv. Never bothered with the marscapone, and I add a bit of good quality vanilla essence. Be warned, it makes a huge amount. I usually half the topping for a small tin.

    Been at a client site today so not a lot done again. White bedding washed and dried so just off to put that back on. Need to hoover once DH is off his work phone.

    Thanks hex2 did wonder about substituting to bring the prics down a bit.

    Didnt know where the recipe was from, my friend made it for us to try at babygroup and passed on the recipe.

    ETA no problem with the size in my house,the way my lot eat its the bigger the better.
