Thanks to all for replies. I didn't have the salmon that night as it was taking ages to defrost - after 3hrs I had somthing else
Gave it to the cats for their breakfast.
Took a nice deep fillet out in plenty of time on Sunday though and it was gorgeous.
Glad that some think it can be done from frozen, will try that at some point to see the difference.
On the salmonella front, was alarmed to discover that it's more likely on salad! :eek: and apparently listeria is quite rarely a serious problem as we often have it ourselves :eek: :eek: Nice.
Seems good hygeine and thorough cooking will save us all, so that's ok then

There's an advert on the telly showing salmon wrapped in foil with a slice of lemon,dill (I think) and a knob of butter, the tag line being you CAN cook straight from frozen in the oven. It's that xrugby player who was on master chef and strictly that does the ad..Matt someone I think0

We LOVE salmon and buy loads. Every time it's on offer I buy several pkts. :j Tesco often have a bag of boneless salmon fillets (frozen) on half price, so a fiver instead of a tenner.
I am sure it says on the back "Best Cooked from Frozen" and I do as someone earlier said, wrap in tinfoil and cook in oven.
Has anybody tried the BIG sides of salmon from Lidl? They do 2 types - one with a tomato/herby type coating (on one side) and the other just herbs. Both are delicious and again, instructions on pkt says cook from frozen. They're only about a fiver as well & make a great meal with salad & new potatoes in teh summer.0 -
Hi i have been a profesional chef for almost 40 years and yes you can cook salmon perfectly from frozen, you can either steam it (place in collinder over boiling water for 5 mins) or you can poach it, (place in boiling water for 4 to 5 mins) you can add a squeeze of lemon or anything you like to the water, one of my favourite ways is to bake it, place frozen salmon fillet on a square of tin foil, spread butter or olive on the foil first, wrap the fillet loosely inside and bake at gas mark 6 for around 20 minutes (if you like you can sprinkle with sea salt or black pepper and open tin foil for the last 5 mins to create a slight crust) really the sky is the limit with salmon fillets, even place them in puff pastry with your dill sauce and bake them that way too... hope you enjoy some these tips.... also if you do wish to thaw out prior to use simply place them in a plastic container and run under cold water yes COLD water for 10 mins and they will be thawed enough for cooking, as regards solmenella, listeria etc you will not introduce any of these because none of those bacteria can survive frozen and none of them can survive being cooked above 80 degrees, except for spores which also die at temps over 120 degrees all of which the above mentioned methods exceed, and now just to add a little twist for you,,, salmon can also be eaten completely raw and will do you know harm whatsoever,,, :T0

if I have forgotten to defrost salmon fillets I do cook them from frozen. In the oven Double wrapped in foil and add about 15 mins to normal cooking time - so about 35 - 40 mins on gas 4 -5 for the thick fillets. check after 30 mins. (cooking times depend on the thickness so thin fillets take much less time.)0

Thanks for this, I had no idea you could cook from frozen, and as I have half a side of salmon (fillets) in my freezer, it's good to know, love all the ideas. :T0
