    100g plain flour,
    2 tsp baking powder,
    1 tsp chilli powder,
    2 eggs, beeten,
    150ml water,
    4 onions thinly sliced,
    2 tbsp chives,
    veg oil for frying.

    Mix flour, baking powder and chilli, then add eggs and water to make a smooth batter. Stir in onions and chives and season with s & p. Then deep fry desertspoon size portions, for about 5 mins each side.

    you need gram (chickpea) flour for proper bajiis (big pakoras)

    here's one recipe, there are many variations

    5oz gram flour
    1teaspoon cayenne or chilli powder
    1 teaspoon cummin powder
    1 teaspoon salt
    chopped or sliced onion to taste
    1/2 teaspoon bicarbonate of soda
    chopped fresh parsley or coriander

    mix dry ingredients
    add water to make thick batter
    add veg/onion to taste
    drop spoonfuls into hot fat/oil
    fry, turning ocassionally for 5-10 minutes
    drain & serve

    variations ... use cauliflower florets instead of/as well as onions
    use 1 teaspoon turmeric in place of other spices
    use 1 teaspoon tandoori powder in place of other spices
    make batter thinner & use to coat slices of any veg ... aubergine, potato, onion etc ... it also works really well with fish fingers believe it or not!

  • i agree with Swan - you need gram flour. i just mix the flour with chilli powder and a bit of water to make a paste. coat your veg in the batter and them away you go.

    don't limit yourself to onions - thin slices of cooked potato or mushrooms are fantastic too.

    i shallow (ish) fry them in a bit of cooking oil in a pan - better than any take away.

    I just remembered something else you can do, it's tasty & money-saving

    you can add left-over (not too wet) curry to the batter after the onions are in, stir it in gently & don't break it up too much, you want to leave 'lumps', it's particularly nice with spinach curry or potato curry

    never done them myself but have had them cooked by an indian friend. They were gorgeous but will vary from recipe to recipe as its a personal thing. You really need gram flour to make them thoiugh which can be difficult to find
