Beef Stew with no beef

Yesterday I made a big SC's worth of beef stew - with the aim of having two meals worth of stew. However, last minute plans meant that only DD ate the stew and the rest of us went out for a meal (MSE style 2 For 1 - and she was going out anyway)

However when I returned I found that she had eaten a huge portion of stew (not that I mind) but had picked out all the beef out of the remaining stew.

Can anyone think of anything I can do to it that I dont have to serve up a beef stew with no beef. I know veggies are good for you but I wanted to make it a bit more interesting.

    I like the stew without the meat.

    You could add a tin of cornbeef.

    Liquidise it, call it Winter Vegetable Soup and serve with warm crusty rolls.

    Turn it into a sauce to pour over / cook in sausages, beef burgers etc. (Either leave it lumpy or liquidise as suggeste by Ka7e)

  • I have to admit I found this very funny!!

    You could either fry up some mince and then simmer it in the stew, maybe put a scone dough on top to turn it into a Beef Cobbler, or thin it with beef stock and do some dumplings to make it as someone posted yesterday a "stoop"! :D If we use this word often enough it will have to go into the Oxford English Dictionary :D

    When ever I do beef stew I always make sure there's plenty of liquid and veg in there for the next day and blitz it down as soup.....it's got all the meat flavour and if you're really lucky you may even find a small bit lurking at the bottom.

    I had leftovers like yours just the other night. I cooked Lamb Shanks in the SC. I'd never made this recipe before with vegetables & can of tomatoes etc. It was allright. Don't think I would do it again though. I put the leftovers in the fridge for the night and took the fat off the top next day and put in a container in the freezer. I think I will add more water & some lentils & prob a bit of this and that and blitz for a soup to have with bread. Of course I will do this when I feel more energetic. :D
    Don't worry about the world coming to an end today. It's already tomorrow in Australia. ;)


  • Two ideas, chuck some well cooked sausages in or use some TVP chunks?
    The quicker you fall behind, the longer you have to catch up...

    Last time I had this I dusted some mince in flour then bunged it into the remaining sauce. It worked a treat :)

    sorry to sound dim , but what does dusting mince in flour do ? i have never heard of this , please enlighten little me .
