    Weighed outside their shell is the way to go for total accuracy, but in the shell is close enough for most purposes :)

    I just zero the scales with a soup dish on, then put my eggs in. They slip off it into the mixing bowl easily enough.

    I would also recomend Delia's all-in-one.
    My tip is to beat everything together until the mix has changed to a lighter colour, they will then come out light and fluffy!

    Do you weigh the egg in it's shell or not! I know it probably seems obvious - but I'm having a blonde day!

  • ka7e - following on from your advice I currently have a victoria sponge baking away in the oven!

    I've put it in at 170C (fan oven) for about 25 mins - is this okay?

    DD and DH are eagerly awaiting the results!
    Squares knitted for my throw ~ 90 (yes!!! I have finally finished it :rotfl: )
    Squares made for my patchwork quilt ~ 80 (only the "actual" quilting to do now :rotfl:)

    Timing really depends on the diameter and depth of your baking tins! I tend to use small deep one rather than the large shallow ones. I grease and flour the tins AND put a circle of greaseproof paper in the bottom. It's soul-destroying to put all that effort into your sponge and have it all stick inside the tin! (Nice with custard though :) )

  • I find that by separating the eggs and whisking the eggwhites its a lot lighter fluffier sponge.
